Charlly’s Visit to the Chocolate Factory

Northern Regional College students got a taste of luxury this week when they visited the Chocolate Manor in Castlerock. Chocolate Manor, which specialises in personalised chocolates, using edible inks to decorate the chocolate, has established a well-earned a reputation for creating quality bespoke chocolates.

The students, who are all doing a Level 3 Diploma in Professional Cooking course at the College’s Ballymoney campus, were given a chocolate masterclass by proprietor and chocolatier Geri Martin who explained how only the finest Callebaut Belgian Chocolate is used at the Chocolate Manor.

Hospitality lecturer, Jane McAuley, who accompanied the students, said the visit gave them a fascinating insight to the process of creating handcrafted chocolates.

She said: “Masterclasses broaden the students’ knowledge and give them an opportunity to develop new skills. This chocolate Masterclass involved tempering chocolate and making ganache fillings using ruby chocolate, white chocolate and milk chocolate. The students also made an Easter egg and individual chocolates using cocoa butter colourings. 

Northern Regional College offers a variety of cookery courses, including Professional Cookery classes and leisure cookery classes for beginners.
